Simple breakfast cookies made with healthy fat, protein, and high-fiber carbohydrates!
Oatmeal Breakfast Cookies
Plant-based – Gluten-free – Vegan
-1 cup quick-cook, dry oats (gluten-free if needed)
-3 tablespoons chia seeds
-2 tablespoons ground flaxseed
-½ teaspoon cinnamon
-½ teaspoon allspice
-¼ cup peanut butter
-¼ cup unsweetened applesauce
-2 tablespoons maple syrup
-Optional ingredients: ¼ cup chopped nuts and/or 2 tablespoons dairy-free mini chocolate chips
1. Preheat oven to 350 degrees F. Line baking sheet with parchment and set aside.
2. In a large bowl, mix together dry ingredients. Add in wet ingredients and mix until well combined. Add in optional ingredients.
3. Form mixture into small to medium-sized balls. Place each ball on the baking sheet and press slightly to flatten. Bake for 20-minutes and enjoy!
-Always check to make sure your ingredients/products are gluten-free and vegan (if desired) before purchasing as manufacturers may change ingredients.
-If you find that your mixture is not holding shape when trying to form a ball, add in 1 tablespoon of peanut butter at a time.
-If mixture is too wet and runny, add in more flaxseeds or oats.
