A light lemon bar recipe that is perfect for that sweet tooth!
Lemon Chia Bars
Plant-based – Gluten-free – Vegan
-2 tablespoons chia seeds
-¼ cup 100% lemon juice
-½ cup unsweetened soy milk
-½ cup dairy-free butter
-¼ cup granulated sugar
-1½ cups almond flour
-¼ teaspoon baking soda
-1 teaspoon baking powder
1. Preheat oven to 350 degrees F. Grease an 8″ x 8″ square baking dish. Set aside.
2. In a small bowl, mix together chia seeds, lemon juice, and soy milk. Set aside for 3-4 minutes to gel together.
3. In a medium bowl, blend butter and sugar until well combined. Add in chia mix and remaining ingredients.
4. Add batter to prepared pan and bake for 45-minutes. Cool, cut and enjoy!
