Experimenting with variations of chocolate chip cookies! Bananas replace the eggs and almond flour replaces the wheat/white flour (in typical recipes). Try swapping in your favorites (like nuts or seeds) for some fun!
Banana Chocolate Chip Cookies
Plant-based – Gluten-free – Vegan
-2 bananas, mashed (approx. ½ cup)
-1 teaspoon vanilla extract
-2 tablespoons maple syrup
-1/4 cup peanut butter
-2¼ cups almond flour
-½ teaspoon baking soda
-½ teaspoon cinnamon
-Dash of salt
-¼ cup dairy-free chocolate chips
1. Preheat oven to 350 degrees F. Line baking sheets with parchment paper or grease well.
2. In a large bowl, mix together bananas, vanilla, maple syrup, and peanut butter.
3. Add almond flour, baking soda, cinnamon, and a dash of salt. Stir until well combined. Add in ¼ cup mini dairy-free chocolate chips.
4. Drop by tablespoon on parchment lined baking sheets. Bake for 12-15 minutes. Cool and enjoy!
