This recipe features chickpeas as the protein base and it is packed with fiber and potassium. You can add in any crunchy veggies you have on hand in place of the peppers and snap peas.
Simple Chickpea Salad
Plant-based – Gluten-free – Vegan
2 cans of chickpeas (mashed)
½ green pepper (diced)
½ cup snap peas (diced)
1 tsp onion powder
2 tsp lemon juice
¼ cup vegan mayo
2 tbsp fresh parsley (minced)
2 tbsp nutritional yeast
Dash of sea salt
