Banana Oat Bars
Plant-based – Gluten-free – Vegan
-3 ripe bananas (mashed)
-½ cup natural peanut butter
-¼ cup maple syrup
-1 tsp vanilla extract
-1½ cups gluten-free quick cook oats
-½ cup buckwheat flour
-¼ cup ground flaxseed
-¼ cup chia seeds
-½ tsp baking powder
-½ tsp ground ginger
-1 tsp allspice
-1 tsp cinnamon
-Optional: 1/4 cup dairy-free chocolate chips
**Always check to make sure your ingredients/products are gluten-free and vegan (if desired) before purchasing as manufacturers may change ingredients.
1. Preheat oven to 350° F. Line a baking sheet with parchment paper and set aside.
2. In a large bowl, mix together all ingredients.
3. Spread mixture on a 13″ x 9″ baking sheet and press down to form an even shape. Bake for 25-30 minutes.
4. Let cool and cut into bars. Store in the fridge for up to 2 weeks.
-1/4 cup applesauce can be used in place of 1 banana. I did this when I was short a banana one week.
-Almond butter can be used in place of peanut butter.
-Regular quick-cook oats can be used in place of gluten-free if you do not have celiac or an intolerance.
-Superfine almond flour can be used in place of buckwheat flour.
-If topping with chocolate chips, I found it best to add the morsels on top right after removing from the oven. The chocolate melted and it was easier to spread a thin layer.
