Chickpea Flour Quiche With Veggies
Plant-based – Gluten-free – Vegan
1 cup chickpea flour
¼ cup nutritional yeast
1 tsp onion powder
1 tsp Italian seasoning
½ tsp baking powder
½ tsp baking soda
½ tsp ground turmeric
1 tbsp flaxseed meal
Dash of salt
1 cup plant milk (I used unsweetened flax milk)
¼ cup salsa (or diced tomatoes)
1 c veggies of choice (I used ½ cup frozen cauliflower rice and ½ cup chopped asparagus)
**Always check to make sure your ingredients/products are gluten-free and vegan (if desired) before purchasing as manufacturers may change ingredients.
1. Preheat oven to 350° F. Grease a 9″ pie pan and set aside.
2. In a large bowl, mix together all ingredients except for veggies.
3. Stir veggies into batter. Pour into prepared pan and bake for 1 hour.
4. Remove from oven, cool and cut. Store in the fridge for up to 1 week.
